E.g. in dating sims, your choices tend to be specific dialogue, meanwhile, in many eroges (especially made by Black Lillith), your choices are picking your rapist.

So you could at least have two new subtags of "Choices" called:
"choice of dialogue" and "choice of scenario". The major difference would be that with the "choice of scenario" you know what is gonna happen next, and with the choice of dialogue anything might happen, the choice might even be pointless.

Example? An example of behavior or vn? I guess I haven't come across an example of vn with that mechanic, but considering the sheer amount of vns I'd seriously be surprised if none of them had such a mechanic.

Let's take a hypothetical example. Say you are an adventurer, and visit multiple villages during the game. Each of these villages has a fisherman whom you can talk to, but none of them have a static dialogue tree, but instead they behaviors are defined by "fisherman archetype" assigned to them at random at the start of the game. Depending on their archtype their dialogue differs, say if the arctype were"jovial", "pandering", "grumpy", and "stoic".
Jovial fisherman's dialogue might revolve around asking questions about your adventure, and rewarding you with fish.
A pandering fisherman might insist on introducing you to his daughter.
A grumpy fisherman might tell you to get lost.
Stoic fishermen might ask if you want to buy fish or not?

I wouldn't consider them random choices, because these arctypes would be set on game start and stay so, thus in a certain play through the fisherman of village #1 would always be grumpy, no matter how many times you talk to him.

In some VNs it is revealed only in the end of a route that protag's sister is actually not full-blooded, and she hid that fact:
